Fukuoka, Japan: Sushi as Edible Art

At Kazuya, the place setting and the atmosphere is just as important as the ingredients.
 

Sushi. It's just not quite the same outside of Japan. Yes, you can get great nigiri in Los Angeles and New York and probably Seattle. However, if you haven't been to a sushi place that really showcases the art-form and mastery of sushi, then you're really missing out. Conveyer belt sushi belt sushi fills a want. The sushi prepared at Kazuya in Yakuin, Fukuoka is a need. Simply put, you need have it in your life.

Timing is essential. The sushi is prepared and served piece by piece.

And it's not just sushi the young master serves up - it's select grilled dishes and 茶碗蒸し (cha wan mushi, a savory egg custard) and seasonal dishes plated up to perfection with a tranquil background. This is not just food. This is a cultural exchange. Much like going to a tea ceremony. The tradition runs deep here.

Tucked away in the back of a normal looking mansion building, Kazuya is a small, 8-seat counter, reservation-only experience. Popular with the local pro baseball team, you should call in advance but unlike Jiro Dreams of Sushi, you won't have to wait a year. A week or so ahead of time should be fine.

The cost will be less as well, but this is no conveyor belt sushi joint. With pieces served one at a time on Arita porcelain plates and ingredients sourced from seasonal, high quality availability, Kazuya is best saved for special occasions. Here, time becomes meaningless. There is only sushi. Some of the best sushi I've ever had in my life.
